Orange Waffles (mid 1700’s)

2 cups flour
1/2 tsp salt
1/3 cup sugar
4 tsp baking powder
1 cup milk
3 egg yolks, well beaten
1/2 cup orange juice
2 orange rinds, grated
6 tblsp butter, melted
3 egg whites, stiffly beaten

Sift flour, salt, sugar and baking powder together in large wooden mixing bowl. In a seperate bowl blend milk and custard-like beaten egg yolks. Pour over dry ingredients in first bowl. Beat until smooth. Stir in orange juice, grated orange rind and melted butter. Lastly fold in fluffy beaten egg whites.
Pour a little batter on the center of a well-buttered waffle iron that has been heated for about 10 minutes, or until smoking hot. Cook unitl steam discontinues to issue from waffle iron. Serve with powdered sugar sprinkled over the top, or with a combination of fresh orange slices and whipped cream.
