Roast Beef Heart

Wash a beef heart well, salt and pepper the inside according to taste. Take 3 medium sized boiled potatoes and 3 onions, chop fine and mash potatoes and onoins together with a little butter and salt and pepper or use bread stuffing as for chicken. Press all you can into the heart and if any dressing is leftover put it on top. Steam 2 hours. Put into a roaster and roast for 1 hour with a little beef fat or lard.
