Beef Breakfast Sausage

OK, made a batch of beef breakfast sausage, we are trying to get away from pork. So, I got about 6 pounds of that 93% lean hamburger meat (it was on sale, woohoo).
Added some cajun spice mix, salt, 5 roasted pablano chilies, 2 roasted white onions and rehydrated garlic.
First thing to do is roast the veggies. Then cut em’ up. Get everything ready and keep areas clean. Mix all ingredients. Run them through the ol’ meat grinder.
Now I will wait for flavors to mingle, then make me a sausage in the morning to see how it is and go from there.
