Diet (yes, the D Word) Chocolate Chiffon Pudding
1 envelope plain gelatin (make sure this is the real stuff and not a bag of garbage, chemicals will kill you)
1 1/2 cups non-fat milk (gross, I know)
3 eggs, seperated
4 tblsp cocoa
1/4 tsp salt
1/4 tsp Cream Of Tarter
1 1/2 tsp Vanila (or to your preference)
sweetner substitute to equal 2/3 c sugar (remember splenda is extracted using a chemical that many people are allergic to)
Sprinkle gelatin ovwe 1/2 cup milk in saucepan. Beat yolks and add to them the other cup of milk, cocoa, salt, blend together. then add the softened gelatin and cook over low heat until mixture thickens or about 5 minutes.
Remove from heat and add sweetener, then chill until mixture begins to form mounds when stirred. At this point, add whites which have been beaten stiff and to which cream of tarter has been added. Fold in and turn pudding into a mold, chill until firm.
Serves 6, each serving about 80 calories.
