Ice (cube) pops are great sore throat remedies. You can mix almost any concoction that you wish and freeze it in an ice pop tray. By adding 1/4 cup of honey to a cup of orange juice. (You can spike it with a little shot of liquid vitamin C.)
Freeze the mixture in pop trays or ice cube trays. The honey and orange juice will soothe and ease the sore throat discomfort. Lemonaide and cranberry juice also work well.

Salmonella Poisoning linked to Cucumbers from Mexico

The Food and Drug Administration is detaining imports of cucumbers from a Mexican company after they were linked to salmonella illnesses in 18 states.

The FDA placed the restrictions against Daniel Cardenas Izabal and Miracle Greenhouse of Culiacán, Mexico. The alert means the United States won’t accept the imports unless the company can show testing that proves the cucumbers are safe.

The federal Centers for Disease Control and Prevention said Thursday that 73 people may have been sickened by the cucumbers.

Salmonella can cause diarrhea, abdominal cramps and fever within a few days of eating a contaminated product. Salmonella can be life-threatening to those with weakened immune systems.

The cucumbers were distributed by Tricar Sales, Inc. of Rio Rico, Arizona. California reported the most illnesses, with 28 people sickened.

The health benefits of coconut oil include hair care, skin care, stress relief, maintaining cholesterol levels, weight loss, increased immunity, proper digestion and metabolism, relief from kidney problems, heart diseases, high blood pressure, diabetes, HIV and cancer, dental care, and bone strength. These benefits of oil can be attributed to the presence of lauric acid, capric acid and caprylic acid, and its properties such as antimicrobial, antioxidant, antifungal, antibacterial and soothing properties.

Coconut oil is used extensively in tropical countries especially India, Sri Lanka, Thailand, Phillipines etc, which have a good production of coconut oil. The oil was also once popular in western countries such as United States and Canada; however, there was a strong propoganda in 1970s spread by the corn oil and soy oil industry against coconut oil. Coconut oil was considered harmful for the human body due to its high saturated fat content till the last decade (2000s) when people started questioning this propoganda. Let us get into some details of how coconut oil works for our body.

How is lauric acid used by our body?

The human body converts lauric acid into monolaurin which is claimed to help in dealing with viruses and bacteria causing diseases such as herpes, influenza, cytomegalovirus, and even HIV. It helps in fighting harmful bacteria such as listeria monocytogenes and helicobacter pylori, and harmful protozoa such as giardia lamblia. As a result of these various health benefits of coconut oil, though its exact mechanism of action was unknown, it has been extensively used in Ayurveda, the traditional Indian medicinal system. The Coconut Research Center has compiled various benefits in both traditional and modern medicine.

Before we move on to the benefits of coconut oil in detail, let us understand its composition.
Composition of Coconut Oil:

Coconut oil consists of more than ninety percent of saturated fats (Don’t panic! First read to the last word. Your opinion may change), with traces of few unsaturated fatty acids, such as monounsaturated fatty acids and polyunsaturated fatty acids. Virgin coconut oil is no different from this. Let us have a bit detailed study of this..

Saturated fatty acids: Most of them are medium chain triglycerides, which are supposed to assimilate well. Lauric acid is the chief contributor, with more than forty percent of the share, followed by capric acid, caprylic acid, myristic acid and palmitic.

Polyunsaturated fatty acids: Linoleic acid.

Monounsaturated fatty acids: Oleic acid.

Poly-phenols: Coconut contains gallic acid, which is phenolic acid. These poly-phenols are supposed to be responsible for the fragrance and the taste of coconut oil and Virgin Coconut Oil is rich in these poly-phenols.

Certain derivatives of fatty acid like betaines, ethanolamide, ethoxylates, fatty esters, fatty polysorbates, monoglycerides and polyol esters.

Fatty chlorides, fatty alcohol sulphate and fatty alcohol ether sulphate, all of which are derivatives of fatty alcohols.

Vitamin-E and vitamin K and minerals such as Iron.
Health benefits of coconut oil

Let us now explore the benefits of coconut oil in detail:
Hair care:

Coconut oil is one of the best natural nutrition for hair. It helps in healthy growth of hair providing them a shiny complexion. It is effective in reducing the protein loss for damaged and undamaged hair.

Coconut oil is extensively used in the Indian sub-continent for hair care. Most of the people in these countries apply coconut oil on their hair daily after bath. It is an excellent conditioner and helps in the re-growth of damaged hair. It also provides the essential proteins required for nourishing damaged hair. Research study indicates that coconut oil provides better protection to hair from damage caused by hygral fatigue.

There is a misconception spread among many people that coconut oil is not good for the heart. This is because it contains a large quantity of saturated fats. Apart from this there is no scientific evidence or traditional knowledge or coconut oil being used for treating Alzheimer’s. It was also not known traditionally that coconut oil helps in the brain function.

Why is coconut oil solid?: Unlike most other oils, coconut oil has a high melting point – about 24 to 25 degress Celcius or 76-78 Farenheit. Therefore it is solid at room temperature and melts only when the temperatures go high. Hence, if you buy a bottle of coconut oil and find it solid, don’t think that there is some problem with it. Coconut oil is like this only. And of course, don’t keep it in your refrigerator.

How to use coconut oil?: If you are using coconut oil for topical purposes, especially hair care, just melt the oil (if it is solid) by keeping the bottle in the sun or warm water. You can also take some coconut oil out and put it in a small bowl and heat the bowl over a flame (do not use microwave). Then take the oil on your palm and apply it to your hair. If you want to use it for internal consumption, simply replace butter or vegetable oils with coconut oil in your recipes. Remember, you need not switch to coconut oil completely, as you will miss the benefits of other oils and dairy products.

Can I use coconut oil for cooking?: Yes, in most of the tropical coastal regions, people use coconut oil for coooking.

I don’t like the taste of coconut oil. What Should I do?: Try using coconut oil in some different recipe. That may help. If you get nauseated after eating coconut oil, don’t force yourself. As it happens with any other food item, your body may be allergic to coconut oil and it is best not to consume it.

Coconut Fish Curry

Serves 4
1 1/2 tsp salt
1 1/2 tsp turmeric
4 small fillets of sea bass or sea bream (about 150g each)
30ml coconut oil
2 medium onions, finely sliced
6 whole green chillies, slit lengthways
3 garlic cloves, sliced into fine strips
30 curry leaves
400ml coconut milk
small bunch of coriander, chopped

Mix 1 tsp salt and 1 tsp turmeric, and gently rub into the fish fillets. Heat the coconut oil in a wide pan, then sauté the onion, chillies and garlic. Add 20 of the curry leaves and keep cooking until the onion is translucent. Add the rest of the turmeric and salt, pour in the coconut milk, heat through, then add the fish fillets and simmer very gently. Fry the rest of the curry leaves in a separate pan. When the fish is cooked, serve garnished with the fried curry leaves and chopped coriander.

Beef Stroganoff

3 tablespoons coconut oil
5 cloves garlic, minced
1 large onion, chopped
3.8 lbs. sirloin tip roast, cut into strips
Salt and pepper to taste
3 (8 oz) containers mushrooms, sliced
1 tablespoon dill weed
1/2 cup red wine
1/2 cup beef or chicken stock
2 tablespoons coconut water vinegar
1 tablespoon Worcestershire sauce
3 tablespoons coconut flour
1 tablespoon tapioca flour/starch or cornstarch
1 16 oz container sour cream
1/2 cup chopped fresh parsley

Grease the bottom of the slow cooker pot with extra coconut oil. Set aside.

In a medium skillet heat the 3 tablespoons of coconut oil and sauté garlic and onion until browned and aromatic. About 1-2 minutes.

Place the beef strips in the slow cooker, season with salt and pepper to taste. Place onion and garlic on top of beef, then add mushrooms and dill weed. In a small bowl mix together red wine, stock, coconut water vinegar, Worcestershire sauce, tapioca and coconut flour. Pour over the beef. You can add more stock during cook time if desired.

Cover, and cook on high for 2 hours, then cook on low for 1 1/2 hours. During the last hour stir in sour cream and parsley, continue cooking until beef is tender and cooked through (each slow cooker will vary on cooking time). (You can also cook this on low for about double the time).

Serve over egg noodle or fettuccini pasta (use gluten-free if needed) with extra sour cream and topped with extra parsley if desired. Enjoy!

E.Coli possible in Farm Rich Products.

BUFFALO, N.Y. (AP) – Rich Products Corp. has announced a voluntary recall of its Farm Rich Mini Quesadillas and other Farm Rich products because of a possible contamination with E. coli bacteria.

The recall, announced Thursday, also includes the Buffalo, N.Y.-based company’s Farm Rich Mini Pizza Slices, Farm Rich Philly Cheese Steaks, Farm Rich Mozzarella Bites and Market Day Mozzarella Bites.

The products were distributed in retail stores nationwide. The company says it’s working with the Food Safety Inspection Service in the U.S. Department of Agriculture to identify the possible source of contamination.

Health officials say symptoms of E. coli infection could occur up to 10 days after exposure and can include diarrhea, abdominal cramps, nausea and vomiting.

How to Make Fire Logs Out of Newspaper

1. Prepare the stack of newspaper by removing every glossy insert from the stack. Glossy inserts can release fumes into your home when burned. Only use plain newsprint to make your homemade fireplace logs.

2. Divide your newspapers into 1-inch stacks. Create the piles by alternating the folding ends of the paper on each side. This makes the stack flatter and easier to roll tightly.

3. Straighten the stack of papers and roll the paper tightly. Allow a slight, tube-like hole through the center to help ventilate the log when burning. Slip a vegetable can on each end to hold it in place for tying.
Secure the cotton string in two places around the rolled-up newspaper. Tie the string tightly with double knots. Remove the cans from the paper ends. Cut off loose string ends.

4. Proceed through the entire stack of loose newspaper by rolling, placing the cans on the end and tying multiple newspaper rolls. This effort should result in one dozen rolled newspaper bundles.

5. Fill the bathtub or laundry tub with water and place the rolled newspapers into the water. Soak the rolled papers completely until the paper expands and takes on a pulp-like appearance from absorbing the water.

6. Remove the rolled papers from the water and squeeze lightly to wring out some of the water.
Place the wet rolled newspapers on end in a well-ventilated area. Allow the papers to dry completely for at least 4 to 5 days. Burning wet newspaper logs will create smoke in your home.

Diet (yes, the D Word) Chocolate Chiffon Pudding

1 envelope plain gelatin (make sure this is the real stuff and not a bag of garbage, chemicals will kill you)
1 1/2 cups non-fat milk (gross, I know)
3 eggs, seperated
4 tblsp cocoa
1/4 tsp salt
1/4 tsp Cream Of Tarter
1 1/2 tsp Vanila (or to your preference)
sweetner substitute to equal 2/3 c sugar (remember splenda is extracted using a chemical that many people are allergic to)

Sprinkle gelatin ovwe 1/2 cup milk in saucepan. Beat yolks and add to them the other cup of milk, cocoa, salt, blend together. then add the softened gelatin and cook over low heat until mixture thickens or about 5 minutes.
Remove from heat and add sweetener, then chill until mixture begins to form mounds when stirred. At this point, add whites which have been beaten stiff and to which cream of tarter has been added. Fold in and turn pudding into a mold, chill until firm.
Serves 6, each serving about 80 calories.

Honey is antimicrobial, antibacterial, and antifungal—so much so that it’s even been used to treat wounds. Its distinctive brand of sweetness is welcome in almost any dish. Just remember that it’s not chemically the same as sugar: If you’re making a swap, substitute no more than one-third of the sugar for honey.


This may seem a bit counterintuitive, but a tiny pinch of salt can enhance the natural sweetness in many ingredients and dishes—and especially in anything with fresh fruit. Before you add something to sweeten that next smoothie, try a little salt and taste it again. The natural sweetness will be more pronounced. Go easy on the shaker, though: Excess sodium harms your heart.

Milk or Cream (Not Necessarily Organic)

Those who can’t stomach the stuff know all too well that milk and cream are full of lactose. It’s less well known that lactose is, in fact, a type of natural sugar that lends a gentle hint of sweetness to all kinds of recipes. (For the lactose intolerant, there are lots of great options.) Think about how a little cuts the bitterness in your coffee. It’s especially good from bring a touch of sweetness to a savory soups and stews. Consider the calcium you’ll get as an added bonus.

Grated Carrots

You know how your grandmother’s recipe for spaghetti sauce calls for sugar? Try grated carrots instead. Their natural sugars bring just the right amount of sweetness (and a dose of vitamin A and beta carotene)–with no added sugar.


Much of the refined sugar you eat comes from beets—and for good reason. They are among the sweetest plants growing. In fact, the original red velvet cakes used grated beets to achieve its earthy sweet flavor and ruddy hue. Try them in smoothies, grated into your next chocolate cake, or in soups for an unexpectedly sweet taste.

Orange Juice

Salad dressings are prime suspect when it comes to identifying hidden sugar in your diet. Make your own salad dressing with olive oil and lemon juice, and sweeten it slightly with a splash of vitamin-C-packed, fresh-squeezed orange juice.

Caramelized Onions

It sounds strange, but onions have a surprisingly high sugar content. It’s just that we don’t taste it in their raw state, when those harsh, sharp, eye-burning flavor compounds hog our attention. Rich in polyphenols, onions are one of the healthiest common vegetables and a nutrition-packed addition to your meals. Cooked slowly over a low heat, the sweetness comes into focus. They can replace corn-syrup-laced condiments, like ketchup, on your next burger.

Maple Syrup

This sweet stuff isn’t just for pancakes. Its complex flavors bring sweetness to baked goods and is a big improvement over granulated sugar in your morning coffee. Luckily, it doesn’t just taste fantastic. With slightly fewer calories and more minerals than honey, this antioxidant-rich elixir has health benefits, too.


Applesauce (no added sugar, please) is a classic ingredient for cutting fat and sugar out of recipes. Grated whole apples can work this way, too. Try some in your next batch of whole-wheat pancakes and you may not even want to reach for syrup. Diced apples also make a fiber-rich sweetener for plain yogurt. Just don’t peel the skin; that’s where most of the disease fighting compounds are.


If none of the above solutions solves your sugar dilemma, you may want to reach for a sugar substitute. Of the currently available options, stevia, which is derived from an herb and has been used in certain parts of the world for centuries, is probably your healthiest bet. It’s super sweet (many times sweeter than sugar or honey) and should be used in moderation.

Cream Of Wheat Cookies

1 1/8 c. butter
1 c. sugar
2 lg. eggs
2 1/4 c. flour
1 1/2 tsp. salt
3/4 c. Cream of Wheat
1 tbsp. vanilla
3/4 c. raisins

1. Mix butter and sugar in large bowl.
2. Add eggs; beat well.

3. Add rest of ingredients and mix.

4. Drop by teaspoonful on greased cookie sheet.

5. Bake at 350 degrees for 12 to 15 minutes.

Cream Of Wheat Dumplings

3 c. milk
1/2 c. Cream of Wheat
2 tbsp. butter
1/2 tsp. salt
2 eggs
1 c. flour

Cook milk to boiling point, then add Cream of Wheat, butter and salt. Let cool. Then beat in eggs, mix well, add flour and beat well. Drop by teaspoons into boiling soup, cook approximately 10 minutes.

Cream Of Wheat Squares

2 c. quick cream of wheat
2 c. water
2 c. 1% milk
2 sticks unsalted butter
1 tsp. yellow food coloring
3 cardamums, powdered
1 1/4 c. sugar
1/2 tsp. salt
1/2 c. roasted cashews (optional)

Boil together water, milk and butter in skillet until butter is melted. Add color, salt and sugar and cardamom, stirring until sugar dissolves. Reduce to low heat. Add cream of wheat 2 tablespoons at a time, stirring constantly until all of it has been added. Continue stirring until cooked, approximately 10 minutes on low heat. Garnish with roasted cashew, if desired.

Cream Of Wheat Bread

1 c. Cream of Wheat (not instant)
1 c. all purpose flour
1/4 c. vegetable oil
1/2 tsp. soda
1 tsp. salt
1 c. buttermilk

Preheat a greased, small iron skillet in a 500 degree oven. In a medium mixing bowl, combine all ingredients; pour into hot skillet. Bake at 500 degrees for 20 minutes. Serves 6.

Nestle Nesquik Chocolate Powder Recall

Nestle USA is recalling some of its Nesquik chocolate powder because of a possible salmonella risk.

The food maker said Thursday that the Nesquik involved was in 10.9, 21.8 and 40.7-ounce canisters produced in early October and sold at retailers across the country.

Nestle says it is issuing the recall after its ingredient supplier, Omaya Inc., decided to recall some of the calcium carbonate used in the product due to possible Salmonella contamination. The company says there are no reported illnesses associated with the product.

Salmonella can cause diarrhea, abdominal cramps and fever. It can be life-threatening in infants, the elderly, pregnant women and those with weakened immune systems.

The affected products have a “Best if sold by” date of October 2014.The recall includes the following products and unit production codes, which are located on the bottom of the canister.

Salmonella recalls are not uncommon in the food industry. Most recently a salmonella outbreak at the country’s largest organic peanut processing plant lead to a major recall of peanut butter and other nut products over the past two months.

Ice Cream Recall

King Soopers and City Market are recalling ice cream because of concerns over pecan allergies.

The recall involves Kroger Deluxe French Vanilla ice cream sold in Colorado, Arizona, Idaho, Kansas, Missouri, Montana, Nebraska, Nevada, New Mexico, Utah and Wyoming.

The federal Food and Drug Administration says people who are allergic to pecans could have a serious or life-threatening reaction if they eat the ice cream.

The recalled ice cream may contain pecans not listed on the label. It was sold in 48 fluid ounce cartons with a sale date of June 12, 2013, under the following UPC Code: 11110 50718.
